What is a simple science/engineering concept one could teach?

The simplest one I know is how changing the shape of existing materials can increase its strength.
Example: Try to support a text book with a sheet of paper. Won't work! But change its shape into a column or triangle and it will. From there you can show examples of truss, bridge arches, etc.

Yes quite simple and yet so much can be said about it.
